Ancient Greek Style Pancakes

Batter Mix

  • All purpose Flour: 150 gr.

  • Water (warm): 100 gr.

  • Greek yogurt: 50 gr.

  • Honey: 1 Table spoon

  • E.V.O.O.: 1 Table spoon

  • Salt: 1 pinch

Serving

  • Honey

  • Sesame seeds

  • Fresh thyme leaves

 

In a bowl add the flour, the salt and the warm water. Let them 5 minutes to stand and then add the yogurt, the honey, and the Extra virgin olive oil. Mix them well with a spoon.

Any small lumps may still be there, don't make a fuss getting rid of them; just let them be. Once you have the batter ready - it needs to be quite thick so to be spooned in the pan - put it aside to rest.

Meanwhile, get a pan on stove in medium heat and pour some extra virgin olive oil to shallow fry the pancakes. When the oil is warm but not very hot, spoon into it the batter to small patties and fry them from each side a few minutes; 2-3 minutes on each side should be enough, depending the thickness of the pancakes.

When fully cooked place them on some kitchen paper to absorb the extra oil. Finish them with a generous drizzle of honey on top and optionally some toasted sesame seeds and freshly picked thyme leaves, although they taste amazing even with only the honey.
